Only the best. Not only does this restaurant enjoy some of the finest views on the island, and not only is it one of Samui's most prestigious places in which to dine. But it also has one of Thailand's premier chefs in Khun Amporn Choeng-Ngam (Chef Berm) at its helm. In fact, as you will see, it would be very hard to beat the Thai cuisine fine dining experience at Conrad Koh Samui's jewel in its culinary crown – Jahn.

Conrad Koh Samui isn't the sort of place that you just 'pop' into. It's way off the beaten track in its very own private world of exclusivity, luxury and elegance. Getting there is an adventure in itself, as it's on a promontory at the south-western point of Samui. Sure, a taxi will whisk you there in 35 minutes from Chaweng but part of the fun is discovering it for yourself.

When you arrive, just wander along to the open-air lobby and you'll be met by a truly breathtaking panoramic vista across the shimmering Gulf of Thailand to the famous Five Islands and beyond. Then go to the edge and you'll experience yet another incredible view if you look directly down, as you'll see that Conrad Koh Samui has been built on the almost sheer face of a cliff with winding pathways linking the various parts of this incredible resort. From up here at the top there'll be an electric buggy waiting to take you further down to where Jahn and the adjacent open-air Aura Lounge bar are situated.

Have a drink or two in Aura Lounge whilst taking in one of Samui's spectacular sunsets (there can't be a better place on the island from which to appreciate them) or go directly into Jahn itself and experience the colourful hues from air-conditioned comfort looking through the restaurant's floor-toceiling glass windows.

Immediately after entering Jahn, you'll feel like you're in another world. One of Oriental opulence and splendour. A place of style and sophistication with its decidedly contemporary Asian décor. Intricately patterned circular pillars, textured stone brickwork, a huge lotus blossom chandelier, discreet lighting, comfortable padded chairs and immaculately set up wooden tables combine to create the perfect environment for Thai fine-dining – and that's exactly what you'll get at Jahn.

Which brings me back to the cuisine, which is Thai. But that's Thai with a capital 'S' for superb! It's not your normal everyday Thai dishes that are served here. Each dish has some novel characteristics and some also include an element of table 'theatre', which we all love.

As to be expected of a restaurant of this quality, there's a full á la carte menu offering a wonderful selection of dishes, however; many diners opt for the amazing 'Journey of Jahn' set-menu; and when you see what it comprises, you can hardly blame them!

Firstly, there's Toong Thong Chicken and betel leaf with prawns, vegetable spring roll to start you off. That's followed by Plaa Pla Bai Bua – seared red tuna, lotus seed, avocado purée topped with Thai herbs, lemon and mint sauce, served on the lotus leaf. Next, it's The Journey of Fisherman – Goong Yang Ma Praw Hom – slow cooked lobster with aromatic Thai herbs, coconut reduction, red curry sauce and tapioca pearl, before a Lemongrass Sorbet palate cleanser arrives to prepare you for the main course.

You have a choice at this point; you can either go for The Trophy of Hunter – Kha Naa Moo Krob which is roasted crispy Kurobuta pork with Thai kale, ruby sauce, or The Collection of Farmer – Kai Oob Fang, a sous–vide chicken breast with herbs, fresh wheat grain served with a smoky single malt whisky. You won't have any regrets whichever one you pick!

Then, after you've had time to digest all that, a pre-dessert is served, and that's in the form of the Thai Melon Ice-cream and Midori. And at this point, you may wish to experience a splendid cup Black Ivory Elephant Coffee – the world's rarest and most expensive, being the elephant equivalent of the famous kopi luwak (which comes courtesy of civet cats). The 'main' dessert follows, and that's the Glauy Tup – grilled banana, banana parfait, almond crumbles and blossoms with caramel sauce. And assorted Petit Fours complete the 'ultra-fine' dining experience – one that it would be very hard to beat. Especially as it's tremendous value for money, being just 2,999 baht (++) per person (5,199 baht (++) including paired wines), and that includes a complimentary limousine service (just give them six hours' notice) that will pick you up from anywhere on the island. The renowned 'Tasting of Jahn' dinner set menu is also available from THB 3,299 (++) per person.

No wonder that Jahn was named as the 'Overall Winner of the World Luxury Restaurant Awards - 2016' as well as the 'Global Winner' in both the Thai Cuisine and Ambience/Romantic Atmosphere sections!
